100% dry farmed Dolcetto from massal selection. Aldo Vajra made an unusual choice: to preserve old Dolcetto vines in the prestigious Barolo vineyards of Coste and Fossati. By saving the picciolo rosso rootstocks, the vines are proudly more than one hundred years old. Thanks to the limited production of one bottle per plant, this Dolcetto expresses itself to the fullest with elegance and concentration. The grapes come from, Coste di Vergne (SW exposure) and Fossati (SE exposure), both in the Comune of Barolo with high altitudes ranging from 420 to 240 meters (1,378 to 1,608 feet). They share the soil composition characterized by Sant’Agata fossils and Messinian sediments. Hand picked in the first half of September. A soft fermentation of approximately 20 days and 8-12 months in the cellar precede bottling.
