Coenobium comes from a Trappist monastery near the city of Rome in the vineyards of the Lazio whose winemaking exploits have in recent years been guided by Paolo Bea of Montefalco fame. "Ruscum" (formerly "Rusticum") spends 15 days on the skins, and was one of the first examples of "orange wine" commercialized. A blend of trebbiano, malvasia, and verdicchio, this is a heady, savory white built for white meats and salumi.
