From Loris Follador's incredibly steep estate vineyard in Valdobbiadene. The vines here are all over 60 years old, planted on the terraced slopes of the estate. The topsoil has largely eroded away, leaving just a few centimeters before the vines hit limestone bedrock. The property is managed with no use of chemical fertilizers or pesticides and harvest is, of course, all by hand. This natural Prosecco is made by partially fermenting the must, then separating the lees from the juice, with the lees passing through a light filtration. The juice and lees are then recombined in bottle, and the wine is then allowed to complete its fermentation under cork. The finished sparkling wine is not disgorged, and no sulfur is added.
