Caviar (available to order)

We offer these three caviars on pre-order from our friends at Island Creek Oysters. Turnaround will vary, but it's typically between 1 and 3 weeks. Here is a link to ICO's basic information about handling and serving caviar.

Sterling Farm began in 1988 by Norwegian entrepreneur Jacob Stolt-Nielson. He had a background in fish farming in Norway and when he moved to the United States, he wanted to work with domestic White Sturgeon. He acquired local White Sturgeon broodstock with the help of UC Davis from the Columbia River they became the first commercial farm of caviar in the United States. Over 20 years later, Sterling is the largest producer of domestic caviar in the United States. They use a Recirculating Aquaculture System [RAS] which recycles the large quantity of water the fish need during their lifespan. They ensure that every part of the fish is used when harvested, including the delicious Sturgeon meat. They are showing us all how great fish farming can be!

For over 30 years, Adamas has been perfecting their craft by breeding and raising Sturgeon at their farm in Pandino. They use an open system sourcing pristine water from their aquifers as well as the near-by Tormo river. The water only cycles the system once and they take great care to ensure the water leaving is at the same quality as our drinking water. They utilize solar power for 100% of their energy needs on their farm as well as feeding their stock non-GMO feed.

Polanco (NEW!)

Let’s take a trip to the southern hemisphere! Polanco is a family owned farm located in the verdant interior of Uruguay, amongst orchids and hardwoods, along the banks of the Negro River (Rio Negro). The farm was founded in 2009 by Facundo Marquez with the intention of producing something truly special in Uruguay for the rest of the world to enjoy. Locals thought Facundo was wacky, wild, and crazy, but it turns out, San Gregorio de Polanco has ideal environmental conditions for raising sturgeon. They’ve been producing caviar (which they export to more than 30 other countries in the world) ever since.
