Made from the Palomino grape, this light sherry is made around the port of Sanlúcar de Barrameda. Four times a year, the "capataz" at La Guita taps 1/3 of the Solera casks and blends the Saca before bottling. This seasonal Saca captures temperature changes, humidity fluctuations and changes in the flor, it gives Sherry lovers 4 distinct blends that embrace the freshness that makes Manzanilla truly great. The grapes are fermented, fortified and placed in large oak casks where there is enough air for flor to develop over the top which blocks the contact of oxygen. The wine is blended using the solera system. La Guita has had long-standing relationships with growers, and the grapes for their Manzanilla come from the prized Miraflores vineyard in San Lucar de Barrameda, known for its excellent albariza soil.
