Paltrinieri was the first producer to isolate pure Lambrusco di Sorbara. The variety is odd in that it requires the presence of another variety for pollination, thus it has always been planted next to other, darker-skinned clones of Lambrusco. Isolating the variety and macerating as one would with any other Lambrusco yields a deep salmon-pink color. Don't be fooled -- this is not a rosé.
