Plaimont is a winery formed about 50 years ago with the explicit intention of resuscitating and perpetuating the sleepy vineyards and wineries of Gascogne in Southwest France. The name comes from the joining of three wineries: Plaisance, Aignan, and Saint Mont, the latter of which is the name of both an historic monastery and a 70-year-old protected wine appellation situated within the Armagnac zone. Plaimont and its community of small growers produce 98% of the wine labeled as Saint Mont. "Projoe" is a forward thinking new project that exploits two of the regions most promising white grapes, gros manseng and petit courbu. This is a sturdy, firmly structured wine that might be compared to a Loire Valley chenin blanc, with a bit less chalk and bit more iron in its core. Try it with sheep's milk cheeses, roasted vegetables, or a well-seasoned pot of beans.
