Viticulture: Organic (certified), biodynamic methods. Average yields here are 15 hl/ha.

Vinification: Long and gentle pressing of whole clusters, ambient yeast fermentation in large oak barrels. Aged for 20 months in foudres. Malo may or may not happen naturally, depending on the vintage. No chaptalization, acidification, fining, or filtration. Bottled by gravity in accordance with the phase of the moon.
