Viticulture: Organic (certified), biodynamic methods. Yields are around 20 hl/ha here.
Vinification: Long and gentle pressing of whole clusters, ambient yeast fermentation and aging for 20 months in used barrels. Malo may or may not happen naturally, depending on the vintage. No chaptalization, acidification, fining, or filtration. Bottled by gravity in accordance with the phase of the moon.
