This wine speaks most of the vineyard and place, thusly called Los Sauces after the eponymous town. It is an equal parts blend of malbec from young vines and cabernet sauvignon from really old (80+ years!) pergola-trained vines. The grapes co-ferment in a concrete tank and age in a stainless steel tank. It has a small percentage of whole bunch fermentation, around 20%. Everything is made around the idea of making a wine that reflects Los Sauces, not one grape variety over the other, made in a traditional way, as people from the region would have made it when vines arrived around 100 years ago (no oak barrels or fancy presses :)) No S02 was added and the wine is not filtered.
