This is Stéphane pulling out all the stops. 100% Braucol on clay-limestone soils and decomposed limestone subsoil. A careful pruning kept only the five best canes. At véraison bunches removed to create ideal exposure, airflow, and to limit yields to 24 hL/ha (about 1.5 tons/acre!). "Winemaking consists of supporting the natural processes with the least possible intervention." Fermentation from indigenous yeasts. No punching down, just one pump-over per day for the first two days. Three week maceration. No fining or filtering. No sulfites added. All this means the wine can be a little reductive in the bottle (therefore protected against oxidation). It should be aerated before serving. - MISE Wines
