Terroir: “Les Terres Noires” schist and marl soils.

Viticulture: Organic (certified), biodynamic methods. Yields of about 25 hl/ha here.

Vinification: Ambient yeast fermentation, 1 month infusion of slightly crushed whole clusters. Aged 10-12 months in used barrels, amphorae and cement tanks. No chaptalization, acidification, fining, or filtration. Bottled by gravity in accordance with the phase of the moon.
