The organically-farmed Shell Creek Vineyard was planted in 1972 by the fifth generation of the Sinton family, who have owned the property and stewarded the land for six generations since the late 1800s. Yhe vineyard is farmed without the use of pesticides, herbicides or synthetic fertilizers and is in the process of getting its organic certification. Small pieces of fossilized shells are found on the ranch and underneath the sandy top soil.
The grapes arrived from Shell Creek on an August morning. After a few hours on the skins, the grapes were directly pressed into stainless steel tank to naturally ferment. Once the wine reached 12 grams of sugar (still sweet), the wine was hand-bottled with the bottles placed on their sides to finish fermentation and go dry in bottle. The higher pressure and bubbles in this vintage is because it went to bottle with higher sugar. The result once the wine went completely dry is concentrated and zippy while still retaining a thirst-quenching crispness.
