Atlantis, true to its fantastical maritime namesake, is a semi-soft cheese washed in seawater and speckled with various edible seaweed varieties from our local North Atlantic region.
Made seasonally, from late summer to fall, we cellar-age it for 45-60 days, during which glutamine in the seaweed imparts a deep umami flavor, making summer on the beach last a little longer!
Atlantis is herbaceous and has notes of asparagus, apples and nori, with light, sea-like salinity. It’s a great expression of fantastic grass-fed summer and fall milk from local farms.
