Sauvignon Blanc (50%), and Semillon (50%) from Renaissance in North Yuba. The Renaissance vineyards tend to ripen unevenly due to the rows being planted along the contours of the mountain, resulting in multiple passes through each parcel during harvest. The fruit for Pearl Thief takes roughly a month to pick, with Sauvignon Blanc ripening first, followed by Semillon. Small lots are transported back to the winery each day and are foot crushed and pressed into the same tank, slowly building the fermentation. When primary fermentation is close to completion, the wine is moved to barrel where it is aged on the lees for ten months. Bottled unfined/unfiltered with a 30ppm sulfur addition. 159 cases produced.
